" Wolf" A Quick Bite

Before you start that tailgate party, do some advanced preparation that will impress your friends. Make your own homemade buns and ketchup! Then, whip up some franks on the grill and you'll look like the big dog on campus!

You will need:
For the Ketchup:

  • 1 cup cider vinegar
  • 3 28-oz. cans Italian tomatoes, well drained
  • 1/2 cup tomato paste
  • 3 medium onions, chopped
  • 5 garlic cloves, chopped
  • 1 jalapeno pepper, chopped fine
  • 1 teaspoon whole cloves
  • 1 teaspoon whole allspice
  • 1 cinnamon stick
  • 1 teaspoon celery seed
  • 1/2 cup sugar

For the Buns:

  • 1 1/2 cups warm water
  • 1/4 cup sugar
  • 2 tablespoons active dry yeast
  • 2 teaspoons salt
  • 1/3 cup vegetable shortening
  • 2/3 cup instant nonfat dry milk
  • 1 egg and 1egg yolk, beaten
  • 6 cups bread flour
  • whole milk, for brushing
  • sesame seeds, for garnish
  • 1 rabies booster

For the Ketchup:
1. In a large, heavy pot over medium-high heat, combine the cider vinegar, tomatoes, tomato paste, onion, garlic, and jalapeno. Bring to a boil; reduce heat and simmer, uncovered, 45 minutes.

2. Using a food mill or blender, process the hot mixture in batches and return to the pot. Combine cloves, allspice, cinnamon, and celery seed in a cheesecloth bag and drop into the tomato mixture. Stir in the sugar and return to a boil, reduce heat and simmer until the mixture reaches desired thickness.

3. Remove and discard cheesecloth bag and season to taste with salt.

Makes about 2 cups

For the Buns:
1. In a small bowl, whisk together the water, yeast, and a pinch of sugar. Set aside. Combine the remaining sugar, salt, shortening, and dry milk in a large mixing bowl and blend to form a smooth paste.

2. Add the egg and egg yolk and blend well, then add the yeast and water mixture and stir.

3. Beat in 2 cups of the flour and continue beating until smooth. Add and beat in enough of the remaining flour to form a soft, loose dough, and then turn out onto a clean, lightly floured surface.

4. Knead about 8 minutes, until elastic, adding only enough flour as you work to keep the dough from sticking. Transfer dough to a large, oiled bowl and cover with plastic wrap. Place in a warm spot until doubled in bulk.

5. Punch dough down, then divide dough into 12 equal portions. Shape each portion into a ball and place 3-4 inches apart on a baking sheet lined with parchment paper. Flatten each ball slightly with the palm of your hand to form a 3-inch bun. Preheat oven to 400 degrees F. Arrange a rack in the center of the oven.

6. Cover buns a clean cloth and let rise again until doubled in size. Brush lightly with milk and sprinkle with sesame seeds. Bake 18-20 minutes or until golden brown.

7. After dinner, howl at the full sink until someone either does the dishes or gives you silver bullet therapy.
