As Good As it Gets"
Step on a Cracked Crab Noodle Salad
Next time you get a seafood salad compulsion, mix up this delicious crabmeat dish. Then, wash the dishes over and over again until you are satisfied that they're really clean.
You will need:
- 1/2 cup chopped and toasted peanuts
- 1/4 cup peanut oil
- 3 tablespoons light soy sauce
- 3 tablespoons lemon juice
- 2 tablespoons rice wine vinegar
- 2 tablespoons freshly grated ginger
- 2 teaspoons minced garlic
- 1 1/2 lbs. lump crabmeat (not imitation "krab" meat)
- 1/2 lb. asparagus, sliced on the diagonal
- 1/2 lb. snow peas
- 1/8 teaspoon toasted sesame oil
- 2 cups thinly sliced scallions
- 1 yellow or red bell pepper, thinly sliced
- 1/4 cup cilantro leaves
- 1 lb. vermicelli or spaghetti
- 1 uncontrollable, compulsive need to cook
1. Make dressing: Combine, peanut oil, soy sauce, lemon juice, rice wine vinegar, freshly grated ginger minced garlic, and 2 tablespoons of the toasted peanuts in a mixing bowl. Whisk together and refrigerate until use.
2. Toss the crabmeat with 2 tablespoons of the dressing and refrigerate.
3. Blanch asparagus and snow peas for no more than 45 seconds. Immediately plunge into ice water, remove, blot dry, and refrigerate until use.
4. Cook pasta until al dente, rinse with cold water; drain and toss with the sesame oil, asparagus, snow peas, scallions, peppers, and half of the dressing.
5. Top pasta with crab, cilantro, the remaining peanuts, and more dressing as desired.
6. Make certain to include at least one obsessive-compulsive in your guest list. (At least you know the dishes will get washed, and washed, and washed, and washed?)
